Difficulty: Easy - for beginners
4 lamb chops
1 small red onion, peeled and grated
1/2 cup red wine
1 teaspoon Dijon mustard
1 teaspoon honey
Trim excess fat from the chops. heat nonstick saute pan over high heat for 2 minutes. Salt and pepper both sides of each chop. place on hot pan. Reduce heat to medium for 3 minutes. Flip chops. continue to cook for 3 more minutes. remove chops from pan. Add grated onions to juices in pan. Stir over medium heat for 4 minutes. Add wine, mustard, and honey. Stir well. Allow to simmer gently for 1 minute. Add salt and pepper. Stir with wooden spoon. spoon over chops.
