Honey Brandy Cream

This is a whipped cream dessert with honey and brandy. Just yum! From the Vegetarian Epicure Book 2, page 350.

Serves: 6


1 cup heavy cream, well chilled
1/3 cup confectioner's sugar
1/3 cup honey
1/3 cup brandy


Whip the chilled cream with the confectioner's sugar in a large bowl until it begins to hold peaks.
Stir the honey and brandy together until well blended.
Pour the honeyed brandy into the whipped cream and continue beating it until it is perfectly smooth and thick.
Spoon the cream into 6 shallow wine glasses or custard cups.
Chill for 2 hours before serving.
