6 whole potatoes (size is up to you)
Shredded cheese of your choice
sliced green onions
real bacon bits (real cooked bacon, chopped or Real bacon bits in a jar)
Start by baking the potatoes either in the oven or in the microwave for smaller batches.
Scrub the potatoes clean, then pierce them all over with a knife or fork.
Rub the potatoes all over with olive oil then put them on a plate for microwave cooking or cookie sheets for oven baking.
For lots of potato skins like I did for my husbands party (20 pounds of potatoes!) I used 2 big cookie sheets and covered them in potatoes.
Cook the potatoes in the microwave until the potatoes just give when you press on them. Allow them to cool.
For oven baking, bake at 350F. Bake for around an hour and 15 minutes. Allow to cool.
Begin heating the grill.
Cut the potatoes in half lengthwise.
Scoop out a bit of the potato, leaving plenty of meat on the skin.
Lightly spinkle the potatoes with salt.
Sprinkle the potato halves with bacon bits and green onions.
Top with cheese.
When the grill is hot, clean the cooking surface and rub it with oil or use Grill spray.
Place the potato skins on the grill and put the lid down.
The idea is just to melt the cheese and crisp the skin. This will only take a few minutes per batch.
Remove the skins to a serving plate and watch them dissappear.
