Chick Pea & Barley Salad

An easy salad, very good for potlucks.

2 cans chick peas, rinsed and drained
4 cups grape tomatoes, halved
1 cup pearl barley, cooked in water and cooled to room temperature
1 cup sugar snap peas, topped & tailed, halved
1 red onions, halved and sliced as thin as possible
1 bunch coriander, minced
1 orange bell pepper, diced
2 teaspoons sesame oil
1 tablespoon olive oil
juice of 2 limes
white pepper, ground, to taste
salt, to taste


Toss chick peas, pearl barley and vegetables. Add lime juice and oils. Salt and pepper to taste.
