Difficulty: Easy - for beginners
8 slices bacon
1.5 pounds ground chuck
4 ounces feta, crumbled
kosher salt and ground pepper
4 hamburger buns
4 leaves Bibb or Boston lettuce
1 large tomato, sliced
Cover a microwave-safe plate with a paper towel. Put four slices of bacon down and then cover bacon with a second paper towel. Microwave on high for six minutes. When bacon is done, repeat with four more pieces.
Heat a large skillet (I used cast iron) on medium heat. While pan is heating up, Form beef into 8 thin five-inch patties. Top four patties with an ounce of feta, leaving a 1/4-inch border, then top with remaining patties. Pinch edges to seal. Season with salt and pepper.
When skillet is ready, cook two burgers at a time for 10 minutes, flipping halfway through. Repeat with remaining burgers.
Top with bacon, lettuce, and tomato and enjoy!
