Rosemary Chicken and White Beans

An easy-peasy crockpot recipe.

Preparation time: 20 mins.
Cooking time: 6 hrs.

Serves: 4-6


4-6 chicken breast halves
1 cup carrots, sliced
½ cup celerey, sliced
1 can Great Northern or other white beans, drained and rinsed
2-3 little branches of fresh rosemary (it's easy to grow, just try it)
â…“ cup Italian dressing


In a large skillet, heat 2 Tbs oil and brown the chicken. Place browned chicken at the bottom of crockpot, and pour beans, carrots and celery over. Strip rosemary leaves from little branch, and sprinkle over your dinner-to-be. Pour over the Italian dressing, and stir to coat.

Cook on low for about 6 hours. Keep an eye on it towards the end; if chicken tips and carrots seem to be burning, it's done, I promise. The suggested cooktime was 8 hours on low, so just start paying attention around 6 hours in the pot.

I wouldn't recommend trying to put this together before a full day at work; so maybe a wake-up-late-on-the-weekend sort of thing or I've-got-classes-all-afternoon-but-I'm-free-until-11-am sort of dinner to make.
