Greek Pasta Salad

Great with grilled chicken or pork roast.

1 pkg rotini pasta 1 can sliced olives (I use greek olives)
1 jar artichoke hearts 1 cup chick peas (garbanzo beans)
1 cucumber diced 1 small onion chopped
1/2 green pepper diced 1/2 red pepper diced
1 cup cherry tomatoes halved 1 pkg feta cheese crumbled
4 tbsp olive oil 4 tbsp red wine vinegar
4 tbsp water 3 tbsp lemon juice
4 tsp oregano 4 cloves garlic minced
salt & pepper to taste


Boil pasta and drain. In a small bowl prepare dressing and set aside. In a large bowl mix pasta with vegetables, toss and add feta cheese. Add dressing and stir. Refrigerate for at least 1 hour. enjoy!
