Sauteed Rice

rice, basmati, 1 c.
oil, 1.5 tbsp
water, 1.7-2 c.
saffron, pinch (if desired), dissolved in hot water
lemon or lime juice, 1 tsp
salt, 3/4 tsp


1. Soak rice in hot water 10 min, drain, dry.
2. Heat oil, stir fry rice for 2 min.
3. Add water, citrus juice, salt, saffron, bring to boil.
4. Reduce heat to low, cover tightly, simmer 20-25 min. Turn heat off and let sit 5 min.
