Chinese Chicken Bok Choy Salad

This is one of my favorite salads! It is a great salad to bring to a pot luck or have at your dinner party. It is easy to make and everyone always loves it!

Ingredients

SALAD:
1 head bok choy, chopped
1 head romaine lettuce, chopped
2 green onions, chopped
2 packages of Top Ramen noodles, crushed (You do not need the flavoring packets)
1/2 T. sesame seeds
1/4 C. silvered almonds
1 small can mandarin oranges, juice drained
1 whole rotisserie chicken, shredded with bones and skin
removed

DRESSING:
1/2 C. vegetable oil
1/3 C. sugar
1/4 C. white wine vinegar
1 T. soy sauce
1 t. sesame oil

Method

Saute Top Ramen noodles, almods, and sesame seeds in a little butter until browned, let cool, and drain extra butter. Mix all dressing ingredients in a blender and refrigerate one hour. In a big salad bowl combine bok choy, romaine lettuce, shredded chicken, mandarin oranges and green onions. Top with noodle, sesame seed, and almond mixture. Add about half of the salad dressing and toss. Add more dressing according to taste.
