Vegetable Panang Curry

Easy vegetable panang curry. You can make this with any vegetable but this is how I like it.

Ingredients

1 can Bamboo Shoots
1 can Baby Corn
1 can Green Beans (or fresh)
1c. Shredded Carrots
1 can Coconut Milk
1 can Chunk Pineapple

Method

1.) Open, drain and rinse any canned vegetables.
2.) Steam or stir fry vegetables in a pan w/a little oil.
3.) While vegetables are cooking begin cooking rice.
4.) Once vegetables and rice are almost done start sauce in a skillet or shallow pan. Combine 1/4 can curry paste w/coconut milk in pan. Slowly bring to a boil, stirring constantly. The mixture will be somewhat creamy. Add curry paste to taste. Lower heat.
5.) Add vegetables and pineapple. Cover and simmer for a few minutes.
6.) Serve over rice.
