2 Tbs olive oil
2 med onions, diced
4 lg cloves garlic, minced
4 tsp chili powder
2 tsp oregano
2 cans (28 oz each) crushed tomatoes
1 qt chicken broth
1 pkg 16 oz frozen corn
2 cans (4 oz each) green chillies, chopped
4 c cooked chicken, shredded
1/2 c fresh cilantro, chopped
2 cans (15 oz each) black beans
1 bag tortilla chips
Heat oil in a large soup pot over medium-high heat. Add onions, saute until tender. Add garlic cloves, chili powder, and oregano. saute.
Add tomatoes, broth, corn, chilies, beans, and chicken. Bring to a simmer.
Reduce heat and simmer partially covered for 30 minutes.
Stir in cilantro.
Let stand a couple of minutes.
Serve warm with baked corn tortilla chips.
