Baked Potato Soup

2 lg baking potatoes, baked, skinned, and chopped
3 Tbs butter
6 Tbs green onions, thinly sliced
3 Tbs all purpose flour
2 tsp chives
1/2 tsp salt
1/4 tsp pepper
4 c milk
1 1/4 c shredded cheese
4 slices bacon, cooked and crumbled


In lg saucepan over medium heat, melt butter. Add half of the green onions, cook and stir until tender. Stir in flour, chives, salt, and pepper.

Add milk all at once.

Cook and stir for 12-15 minutes or until thickened and bubbly.

Add potato pulp and 1 c of the cheese. Stir until the cheese melts.

Spoon into bowls and top with sprinkled cheese, green onions, and bacon.
