Beet and Fennel Salad

So tasty (as long as you're into blue cheese and raw veggies). Stains like there is no tomorrow (beet juice!)

One large Beet
One bulb fennel
One large apple
sprig of mint
small amount of blue cheese
candied pecans (or raw if you prefer)
balsamic vinegar
salt and pepper


In large (stain proof) bowl, grate peeled beet and apple, and fennel. Chop mint, add. Mix together with oil and vinegar to taste, add salt and pepper. Top with candied pecans and blue cheese. Very refreshing.
