Beef Enchiladas

Ingredients

1 can Old El Paso Enchilada Sauce
1 pkg McCormick Enchilada Seasoning
1 can Ranch Beans
1 lb Ground Beef
1 pkg shredded Mexican 5 Cheese
1 can Black Olives, sliced
1 dozen Corn Tortillas
2 tbsp Vegetable Oil
Salt
Pepper
Garlic Salt
Dried Minced Onion

Method

Preheat oven to 350 degrees
Brown the beef with salt, pepper, garlic salt, & minced onion to taste
Strain the beef
Mix enchilada sauce with enchilada seasoning
Add a little of the mixture to beef for flavor
In a bowl mix the beef and ranch beans
Fry tortillas in vegetable oil until golden brown (do not overcook, tortillas should be pliable)
In a pan (13x9 is good), fill tortillas with beef & bean mixture & sprinkle cheese on top of filling
Roll & line up tortillas in pan
Top the filled tortillas with remaining sauce
Sprinkle with cheese
Top with olives
Bake for 15 - 20 mins
