Buttermilk fried chicken

2 fryers, approximately 1 1/2 pounds each
2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups buttermilk
fat for deep frying


Cut the chicken into serving pieces. Put the flour in a paper sack, then place two pieces of chicken at a time in the flour; shake well so that they are completely covered. Add baking powder, baking soda, salt and pepper to the flour left in the sack. Shake well to mix. Dip each piece of chicken into the buttermilk and then place in sack and shake well until coated. Drop pieces into 350 degree F hot fat until golden brown. Serve piping hot.
