Balsamic Chipotle BBQ Sauce

Ingredients

1 Beer – Widmer Brothers Hefeweizen
2 Cup Ketchup
½ Cup Dark Agave Nectar
2 Cup Balsamic Vinegar
2 Chipotle Peppers in Adobo
½ Sweet Onion
12 Cloves Roasted Garlic
1 heaping tbsp Raw Sugar
1 Tbsp Cumin

Method

Sauté onions over medium heat with a pinch of sugar until they are soft and caramelized, crush roasted into a paste and add to the onions. Cook for another 2 Minutes. Add Balsamic Vinegar and heaping TBSP of Raw Sugar and reduce over medium low heat until reduced by half. Add the rest of the ingredients and reduce over medium heat by 1/3 or until coats the back of a spoon.

Allow to cool and either blend it in a blender to make it smooth or go rustic.
