Difficulty: Easy - for beginners
approx 8 oz tilapia fillets cut into 1 to 2 inch planks
salt, pepper & cayenne
1 tblsp olive oil
1 tsp sesame oil
1 tsp smoky paprika
2-3 tomatoes chopped into 1/2 inch cubes
Place fish on plate and sprinkle with salt, peppers & coriander. zest lime on fish then squeeze juice of lime onto fish. Let sit for ten minutes to marinade. Reserve all juice.
Heat oils in very hot skillet along with paprika. Place fish cutlets in pan and sear on one side for 2 minutes. Flip fish. Cook for another 2 minutes. Pour lime juice and seasoning from plate onto fish. Cover with tomatoes. Cook for remaining 6 minutes, stirring once or twice only to make sure tomatoes cook. Serve immediately. Can be paired with salad, rice or soft bread. I like it by itself.
