FS Chicken & Leek Lasagna

Ingredients

500g Chicken Breast Diced
1 Tbs FS Oil
1 Leek finely sliced
2 Spring Onion finely sliced
1 stalk Celery finely sliced
2 gloves garlic
Lasagna Sheets

Sauce
2 Tbs Butter or Nuttlex
2 Tbs Plain Flour
1 Cup of Milk or equivelent
1 cup of stock (FS homemade)

Method

Sauce-
melt butter in saucepan, add flour and cook for 2 minutes, add stock and milk slowly so not to get lumps. Continue to stir until thickened. Reserve about 3/4 cup of sauce for top of lasagna.

Cook chicken and garlic in pan remove and add to sauce, using same pan add celery cook for 5 mins then add leek and spring onion. Once cooked add to chicken and sauce.
Layer lasagna sheets and chicken mix, finishing with lasagna sheet, top with reserved sauce. Add 1/2 cup of water to dish, cover with foil and bake in oven for 40min remove foil and bake until starting to brown on top.
