Salmon Sandwiches with Herbed Mayo

Ingredients

2 tbsp light mayonnaise
2 tsp. chopped fresh basil
1 tbsp. olive oil
1 tsp. soy sauce
juice of lemon
1 tbsp. minced green onion
1 1/2lb salmon filets cut into 1/4 inch slices
4 slices whole grain bread
4 leaves romaine lettuce
4 slices ripe tomato

Method

1. Mix mayonnaise and basil in small bowl; refrigerate
2. Combine oil, soy sauce, lemon juice and green onion in resealable plastic bag; add salmon. Reseal. toss lightly to coat. Refrigerate 10 minutes
3.Heat nonstick pan over medium high heat. Remove salmon from bag; discard marinade. Cook salmon 2 minutes per side or until fish flakes easily with fork
4. Toast bread. Place lettuce on each of 2 bread slices; top with salmon; spread herb mayonnaise on salmon. Top each with tomato and remaining bread slice. Serve immediately.
