Ingredients

Tomato
Roasted red peppers (in a jar) OR a fresh red pepper
Fresh mozzerella
Freshest basil you can possibly find
balsamic vinaigrette
Portuguese rolls
You'll also need a panini maker, a knife and a cutting board. If you don't have a panini maker, you can put it in the oven.

Method

If you are using a fresh red pepper, you will need to roast it in the oven, which takes about 20 mins so do this first. It will be black in some places on the outside when it is done. Then, cut it up in strips. Cut the portuguese roll in half and toast on the panini maker. Add strips of roasted red pepper. Cut pieces of mozzarella and place on top. Then, put the other half of the roll on top and close the lid of the panini maker. Cook until the mozzarella is melted. Sometimes people like to hold down the top of the panini maker because it cooks faster if you do this although I don't think this is vital. While it is cooking, cut up the tomato and rip up the basil leaf. Then take the sandwich off the panini maker and add the sliced tomato, basil and balsamic vinaigrette.
