Homemade Salami

Great for sandwiches or a quick addition to a party tray. Your guests will be impressed.

Ingredients

5 lbs. ground beef (part pork, venison, moose)
2 rounded tsp. salt
2 1/2 tsp. coarse ground pepper
2 1/2 tsp. mustard seed
1 tsp. garlic powder
1 tsp. hickory smoked salt

Method

Mix all ingredients well together using your hands. Refridgerate for 24 hours. Mix very well again with hands. Refridgerate another 24 hours. Shape into 3 inch rolls. Place on a broiler rack, adding a little water to broiler pan. Bake for 10 to 12 hours at 150 F, overnight is the easiest. Eat or freeze. Enjoy this without all the preservatives that you get when you purchase cold meats.
