1 lb. chicken, cooked and cubed
1 med. onion, chopped
10 oz. thawed spinach, well drained
1 tsp. cumin
1/2 c. grated parmesan cheese
1 can enchilada sauce
2 c. montery jack cheese, shredded
combine first 5 ingredients. Fill tortilla with mixture, roll and place seam-side down in greased baking dish. repeat until mixture is gone. top with enchilada sauce and cheese.
BAKE: at 350 degrees for 30 - 40 min.
