Fresh Rhubarb Dumplings

Very sweet and yummy, serve with fresh whipped cream or ice cream.

¾ c packed brown sugar

¼ c sugar

2T corn starch

1c water

3c sliced fresh rhubarb

3T butter

1 ¼ c flour

¼ c sugar

1 ½ tsp baking powder

1/3 c milk

¼ c butter melted

2 tsp sugar

½ tsp cinnamon


In a saucepan combine brown sugar, ¼ cup sugar and corn starch,
Stir in water. Add rhubarb and 3 T butter. Cook over med heat until it comes to a boil. Reduce heat and continue cooking approximately 10 minutes, until rhubarb is tender and sauce is thickened. For dumplings, combine flour, ¼ cup sugar, baking powder, milk and ¼ cut melted butter. Drop batter from a tablespoon over top of hot fruit mixture. Cover pan and continue to cook at low heat for 10 to 15 minutes, until toothpick inserted comes out clean. Time will depend on size of each dumpling. Sprinkle a mixture of 2 tsp sugar and cinnamon over top of dumplings.
