Tomato Basil Bisque

3 Pounds Roma Tomatoes, Chopped
and Seeded
1 Large Can Chopped Tomatoes
2 Tablespoons Olive Oil
1/2 Large Can Tomato Juice
2 Pints Heavy Cream
1 Can Chicken or vegetable Broth
1 Cup White Wine
3 Ounces Basil, Chopped
1 Ounce Garlic
Salt and pepper


Over medium heat, add diced tomatoes,
basil and garlic to oil, sautéing. Add
wine and broth. Add tomato juice and
slowly stir in heavy cream. Simmer
and reduce by 50% or until desired
consistency, stirring occasionally, about
