southwestern lasagna

another quick, easy and yummy casserole!

Cooking time: 30 min.



1 1/2 lb. ground beef
1 med. onion, chopped
1 15 oz. can enchilada sauce
1 14 1/2 oz. can diced tomatoes, undrained
1 2 1/4 oz. can sliced black olives, drained
1 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1 c. cottage cheese
1 egg
1/2 lb. monterey jack cheese, thinly sliced
8 corn/flour tortillas, halved
1/2 c. shredded chedder cheese


brown beef with onion. drain fat. stir in enchilada sauce, tomatoes, olives, salt, garlic powder, and pepper. bring to boil. reduce heat and simmer uncovered for 20 min. in the meantime, combine cottage cheese and egg. set aside. spread 1/3 meat mix in 13 x 9 x 2 in. dish. top mixture with half of monterey jack, half cottage cheese mix and half tortillas. repeat layers ending with meat sauce. sprinkle with chedder cheese. cover and bake at 350 degrees for 20 min. uncover and bake another 10 min.
