Limas with Onions and Tomatoes

Ingredients

1 tsp canola or corn pil
1 1/2 oz cooked ham, diced
1 15 oz can lima beans, drained
1 medium tomato, chopped
1/2 medium onion, chopped fine
1/2 c water (I use 1 c.)
1/4 tsp pepper sauce

Method

In a medium saucepan, hwat the oil over a low heat, swirling to coat pan. Cook ham in pan about two minutes, until edges are brown. Using a slotted spoon, remove ham and set aside in a dish. Do not drain the pan. Stir in the remaining ingredients except for the ham and hot pepper sauce. Over high heat, bring to a boil. Reduce heat, cover, and simmer 10 minutes. Stir in ham and add pepper sauce. Cover pan and, if you can stand it, let sit 10 minutes, allowing flavors to blend.
