Serves: 4 layer cake filled and frosted

3 cups heavy whipping cream
8 oz. bittersweet or semisweet chocolate
2 tsp. vanilla or Grand Marnier
Heat cream to scalding, then take off heat and add broken-up chocolate. Once it has melted, whisk it into the cream. Chill covered in a refrigerator (at least 2-3 hours). Once thoroughly chilled, beat the chocolate/cream mixture until fluffy, but not stiff.
