Chicken Enchiladas

Makes a lot. I had to use a 9 x 13 AND a 8 x 8

Cooking time: 30 min.

Difficulty: Easy - for beginners
Serves: 4-8


- 4 Chicken Breasts, Poached
- 2 cups Sour Cream
- 2 cans Cream of Chicken Soup
- 1 can Green Chilies, Undrained
- 4 scallions, Chopped
- 3 teaspoons Chili Powder
- 2 cups Shredded Cheddar
- 1 package Burrito sized Tortillas
- Sour Cream and Taco Sauce for topping


Mix scallions, chili powder, and shredded cheddar. Chop chicken and add to scallion mixture. Mix 2 cups sour cream, 2 cans of Cream of chicken, and Green Chilies in separate bowl. Add 1/4 to 1/2 cup of chicken water ( the water the chicken was boiled in ) to the Sour Cream mixture. Then Add 1 cup of the Sour Cream mixture to the Scallion Mixture. Cover bottom of 9 x 13 pan with the remaining sour cream mixture. Fill flour tortillas with Chicken and scallion mixture and roll up. Place in 9 x 13 and bake at 350*
