Basic Crepes

4 cups milk
2 eggs
2 cups all-purpose flour
2 T butter (plus extra for greasing the pan)
1 t salt
1 t sugar


1. in a blender, combine all ingredients and blend until smooth
2. refrigerate for 2 to 8 hours
3. in a crepe pan over medium heat, melt a little butter to coat the pan
4. lift the pan at a slight angle and pour some of the batter into the centre, tilting the pan to spread the batter to the edges
5. return the pan to the heat and cook until the crepe is golden underneath
6. flip the crepe over and cook until it looks done
7. repeat with the remaining batter
8. serve each crepe with your choice of sweet or savoury filling
9. refrigerate unused crepes for another day
