Brussel Sprouts & Rotini

Ingredients

8 oz. brussel sprouts
1/2 white onion, sliced
Grated sharp cheese for sprinkling
2 whole banana peppers
1/2 cup rotini
1 tbsp. olive oil
Salt, lemon pepper, and garlic powder to taste

All measurements are ESTIMATED, may need adjustment!

Method

Bring a pot of water to the boil and lightly salt. Add rotini and begin to cook according to directions.

Rinse, peel and trim brussel sprouts. Slice sprouts in half and place in center of a large piece of aluminum foil. Slice banana peppers, discard the seeds, and add to foil. Add onion, olive oil, and spices to packet. Toss gently to coat, then tightly fold foil into packet and place on heated grill (or Foreman grill).

Finish cooking rotini and drain. Set aside.

Cook packet for 5-10 minutes, or until onion is translucent. Add vegetable mixture to rotini, and then drizzle excess oil from packet on top.

Sprinkle generously with grated sharp cheese and serve warm.
