Chimichurri sauce

Pesto-like sauce for any kind of meat, from $5 Dinners

1 cup loosely packed parsley leaves
1 cup loosely packed cilantro leaves
1/4 cup onion, chopped
2 tablespoons olive oil
1 tablespoon vinegar (apple cider or balsamic)
1 tablespoon fresh basil
1 tablespoon fresh oregano
1 tablespoon fresh thyme
1-2 clove garlic (depending on taste)
Juice of one lime with zest if desired
pinch of cayenne powder
pinch of salt


Combine all of the sauce ingredients in a food processor and puree until smooth.
Spoon chimichurri sauce over chicken, beef, fish, etc.
