Mom's Meatloaf

This is the meatloaf my friend's all raved about in college - it's very moist and flavorful - not to mention it keeps well as leftovers the next day!

Preparation time: 20 mins
Cooking time: 1 hr.

Serves: 3-4


1 lb ground beef (I use lean - 93%)
1 egg
2/3 cup HOT milk
1/3 cup cracker crumbs (I crush saltine crackers)
1 small onion (I usually add more since I love onions)
1 1/3 cup BBQ sauce***
1 tsp salt
2/3 tsp brown sugar

Sauce Topping:
1/4 cup ketchup
1/4 cup BBQ
Brown sugar to taste

*** Optional substitute (2/3 cup of the BBQ sauce for combo ketchup & horseradish for some extra kick)


Preheat oven to 350

Mix together ground beef and egg.

Combine all ingredients with meat and egg mixture: onion, salt, cracker crumbs, hot milk, BBQ sauce and brown sugar. Mix together fully.

Pour meatloaf mixture into a large backing pan and even out the filling by shaking pan back and forth.

Make the sauce by combining the 1/4 cup of BBQ and Ketchup with brown sugar to taste - spread over meatloaf top with a spoon.

Bake for 1 hour at 350 - or until the meat pulls away from the sides of the pan (this shows the meat is finished cooking).
