Serves: 2 as an entree

Clove of garlic, peeled and crushed (or leave whole for a milder taste)
Small onion, diced
Fresh or dried oregano or basil
2T tomato paste
400g tin of diced, peeled tomatoes
Dash of Tabasco sauce or Worcester sauce (to taste)
Lightly brown the garlic and onion in a non-stock pan sprayed with cooking spray.
Add the rest of the ingredients and simmer 1-2 minutes.
Option 1: fully puree the soup with a stick blender and add 1/2 cup of trim milk for a cream soup
Option 2: leave chunky and add 1/2 cup of cream for and top with shredded chicken to make a filling meal
