Quick Morrocan Chicken Soup

Ingredients

1 clove of garlic, crushed
1 tsp grated ginger
1 tin of morrocan spiced tomatoes OR
1 tin plain tomatoes and 2tsp morrocan spice mix
1 tin of chickpeas, drained
2 cups of chicken stock (liquid)
1/2 of vegetables (whatever you have) carrots, spring onion, celery, capsican, mushrooms...
1T tomato paste
4 chicken thigh fillets, grilled or roasted

Method

Lightly brown the garlic in 1T oil and add the ginder, stir for 1 minute then add the tomatoes, chickpeas, stock, tomato paste and vegetables
Simmer until the vegetables have cooked
Shred the cooked chicken and add it to the pan
Simmer for a further 2 minutes
Serve with fresh, chopped mint or parsley, a dollop of greek yoghurt and a sprinkle of paprika or chilli and some toasted turkish bread on the side
