Serves: Makes 1 cup of sauce

1 Cup Trim or lite blue milk (or rice milk)
2 Tablespoons of wholemeal flour (or white flour for a lighter sauce or gluten free flour)
Dried or fresh chopped herbs (try parsley, basil or oregano)
Paprika
Pinch of mustard powder or a teaspoon of made mustard
Salt and pepper to taste
For Cheese Sauce:
100g low fat cottage cheese
2T grated parmesan
Pour the milk into a small sauce pan and sprinkle over flour
Stir with a whisk while it comes to the boil. You'll need to whisk the living daylights out of it but it's great for your arms so go hard out.
As the milk comes to the boil turn down the heat, keep whisking and simmer until sauce thickens
Season to taste with herbs, paprika, mustard powder, salt and pepper. Remember it's easier to add a little more than take some out....!
