8 Large Green Prawns
3 cloves garlic, thinly sliced
2 tbsp Olive Oil and butter
3 tbsp Red Pepper paste (or pesto, or pimento, or baked red peppers pureed)
1 tomato, seeded and diced
1. Devein and shell prawns, leaving the tail intact.
2. In a pan, place butter and olive oil, cook until bubbly. Place prawns in, and when they are 1/2 cooked, place the rest of the ingredients in, and toss well to combine.
Garnish with lemon wedges and cilantro, and serve hot!
