â€¢1¾ c. + 2 Tbsp. unsifted flour
â€¢1½ c. granulated sugar ½ tsp. baking powder
â€¢1 tsp baking soda
â€¢¾ tsp. salt
â€¢1 â€“1 ½ c. chocolate chips
â€¢1 c. mashed overripe bananas
â€¢2 large eggs
â€¢1/3 c. buttermilk
â€¢½ c. vegetable oil
â€¢ 1 tsp. pure vanilla extract
Preheat over to 350.
â€¢ Grease and flour three mini loafpans or 24 muffins. â€¢Sift together flour, sugar, baking powder, baking soda, and salt into large bowl.
â€¢Stir in chocolate chips.
â€¢In a separate bowl, combine mashed bananas, eggs, buttermilk, oil and vanilla.
â€¢ Pour liquid ingredients into flour ingredients and stir until combined.
â€¢Divide batter among loaf pans or muffin tins (3/4 full) â€¢Bake loaves for 33-35 minutes or muffins for 22-25 minutes until deeply golden brown and toothpick inserted into center comes out clean.
