Smoked Chicken Chowder

A nice soup to welcome in Autumn. I doctored it a bit, using some blackening seasoning, flavored jack cheese, smoke flavoring, and made my own broth. it needs a heavy hand with the salt and pepper. I'll make it again and try a few different things...

Serves: 6


1 large yellow onion chopped
1/4 cup olive oil
5-6 small white new potatoes, cut to 1/4 inch cubes
4 cloves of garlic, minced
1/4 cup flour
3 cups chicken broth
2 cups half and half
1 can diced tomato, drained
1/2 cup shredded jack cheese
1/2 cup shredded smoked gouda cheese
1 tbsp fresh parsley, chopped
1/4 tsp chile powder
1 lb chicken cooked and chopped or shredded
hot sauce to taste
salt and pepper to taste


cook onions in olive oil until softened
add garlic and potatoes
cook one minute
add flour
stir two minutes
add 2 cups broth and half and half
bring to a boil while stirring
add tomatoes, cheeses, parsley, chile powder and chicken
simmer for 20 min, adding chicken broth as needed for desired consistency
season with salt/pepper and hot sauce
