Broccoli Rabe with Garlic and Lemon

Adapted from a Real Simple recipe. Broccoli rabe can be too bitter for some. Try also swiss chard, or for a more peppery bite try arugula or radichio

1 lb of broccoli rabe, trimmed
1 T kosher salt
1/2 lemon
1 T olive oil (EVOO)
1 T butter (optional)
2 cloves garlic, sliced thin on a mandoline or the Pampered Chef garlic slicer
1 t kosher salt
pepper to taste


Broil the half lemon for about 5 minutes until slightly charred. Remove and cool.

Blanch the broccoli rabe for 1 minute in a large pot of boiling water with 1 T kosher salt added. Drain

Heat EVOO and melt the butter in a skillet. Add the garlic and sweat 1-2 minutes, depending on the thickness of the garlic slices. Squeeze the lemon into the skillet, then add the broccoli rabe. Sprinkle with 1 t kosher salt and fresh ground pepper to taste. Saute for about 2 minutes.
