Pecan Pie Muffins

These muffins are very dense and very sweet. I usually make them mini muffin size because they are so rich. Good as snacks, with fruit salad, or as an after dinner dessert. Be sure not to over bake and immediately remove from pan.

Preparation time: 15 min.
Cooking time: 20 min.

Difficulty: Easy - for beginners
Serves: 12

1- Cup Packed Brown Sugar
1- Cup Chopped Pecans ( note: I use about ½ cup more)
½- Cup Flour
2- Eggs
1- Stick Butter melted ( best if real butter used)


Mix brown sugar, pecan, and flour together. Make well in center. Beat eggs until frothy, add melted butter to eggs and pour into dry mixture. Mix only until well moistened. Pour into muffin tins that have been sprayed with Pam and bake at 350 deg. for 20 to 25 minutes. Remove muffins from tins immediately and place on wire racks to cool. You may have to use a knife to loosen edges before removing muffins from tin.

Makes about 1 doz.

Note: If making mini muffins bake at 350 deg for 15 to 18 min. Makes about 24 mini muffins.

* Do not over bake or muffins will very hard to remove from pans.
