Corn Pudding

2 Tbs unsalted butter
2 c corn kernels
4 scallions, chopped
3 large eggs
1 Tbs honey
1 Tbs flour
11 c whole milk
1 pinch cayenne pepper
1/2 c grated sharp cheddar cheese
2 Tbs kosher salt
ground black pepper
4 fresh basil leaves, sliced


Preheat oven to 350.

Melt butter over med-high heat in a large skillet. Add corn and scallions and saute 3 minutes. Remove skillet from heat.

In a bowl, beat eggs slightly. Add honey, flour, milk, and cayenne. Whisk to combine.

Add corn misture to egg mixture. Fold in cheeese, salt, pepper, and basil. Mix well.

Pour mixture into a greased baking dish. Sprinkle with a small amount of grated cheddar.

Bake 30 minutes.

May serve hot, warm, or cold.
