Difficulty: Easy - for beginners
4 ears of corn, shucked and kernels removed
1 pint cherry or grape tomatoes, cut in half
2 cups fresh blueberries
1 orange bell pepper, seeded and diced
1 avacado, seeded and diced
1 cucumber, peeled, seeded, and diced
splash olive oil
salt and pepper
In a medium bowl, combine corn, tomatoes, blueberries, bell pepper, avocado, and cucumber.
Squeeze lemon and lime into a small bowl. Add olive oil, salt and pepper. Whisk together.
Drizzle dressing over salad and toss
