Difficulty: Easy - for beginners
1 Tbs olive oil
1 lb red onions, peeled and sliced thin
1 pkg (15 oz) puff pastry dough
1 c diced goat cheese
In a large, heavy skillet, heat the oil and add the onions. Cook over low-medium heat for 10 minutes or until softened, stirring them occaisionally to prevent browning. Add salt and pepper to taste. Continue cooking for 2 more minutes then remove from heat.
Preheat the oven to 425. Unroll the puff pastry dough and cut out into four 6" rounds (use a small plate as a guide). Place the rounds on a damp cookie sheet. Use a sharp knife and score all the way around the edges 3/4"
Divide the onions between the four pastry rounds. Spread to scored edges then sprinkle with goat cheese.
Bake for 25-30 minutes until golden brown.
