Baked Leek and Potato Au Gratin

2 lbs potatoes, peeled and sliced thin
2 lg leeks, trimmed and sliced into 1/2" pieces
7 oz Brie or Camembert, sliced
2 c light cream


Preheat oven to 350.

Cook the potatoes in lightly salted boiling water for 3 minutes or until slightly tender. Add the leeks during the last minute. Drain and turn the vegetables into a buttered ovenproof baking dish.

Tuck slices of cheese among the potatoes. Season again with salt and pepper.

Pour cream over potatoe mixture.

Bake for one hour or until potatoes are tender throughout. If Au Gratin browns too much, cover lightly with foil while cooking completes.
