Difficulty: Easy - for beginners
4 egg yolks
1/4 c powder sugar
4 Tbs Marsala, Madiera, or sweet sherry
Place the egg yolks and sugar in a large heatproof bbowl and beat until the mixture is pale and thick.
Gradually add the Madiera to the egg m ixture 1 Tbs at a time, whisking well after each addition.
Place the bowl over a pan of gently simmering water and whisk for 5-7 minutes, until thick. When the beaters are lifted, they should leave a thick trail on the surface of the mixture.
Pour into four warmed, stemmed glasses and serve immediately with biscotti for dipping.
