Butter Cookies

Difficulty: Easy - for beginners


2 1/2 c flour
1 c sweet butter
1 c powder sugar
2 tsp vanilla extract


Put the flour in a food processor. Add the butter and process until the mixture forms coarse breadcrumbs.

Add the sugar and vanilla and process until the mxture forms a dough.

Shape the dough into a 2" sausage-like roll. Wrap the roll in plastic wrap and place in refrigerator for at least 1 hour or until firm.

Preheat the oven to 400.

Grease two cookie sheets. Use a sharp knife to slice 1/4" cookie rounds off of roll. Place rounds on the cookie sheets and then bake for 8-10 minutes or until edges turn pale golden brown. Remove from oven and let stand for 5 minutes before removing to a cooling rack. Dust the cookies lightly with powder sugar and serve.
