Roasted Red Pepper & Sweet Potato Soup

Tasty, easy to make ~ Roasting veggies smell awesome

3 Sweet Red Peppers, chopped (I used long pointy ones)
2 Sweet Potatoes, peeled and cubed (about 1lb)
1 Onion, Chopped
2 Green Onions, Chopped
3-6 Garlic Cloves (Whole is fine)
3 Tsp Dried Italian Herb Seasoning
1 Tsp Salt
1/2 Tsp Black Pepper
1x Large Container Veg Broth (900ml)
1x Small Container Balkan-Style Plain Yogurt
Pinch Fresh Parsley, Finely Chopped (optional)


In a roasting pan, toss together Red Peppers, Sweet Potatoes, Onions, Garlic, Italian Seasoning, salt, pepper and Olive oil lightly drizzled over veg's. Bake @ 425F for 1 Hour, stirring once, until tender.

In large pot puree roasted veggies, Veggie Broth & 1 cup water. Bring to boil slowly (if heat is too high soup will splatter) reduce heat and simmer for 5 minutes

Dish up in individual bowls add a dollop of Yogurt and swirl with a spoon for decorative pattern ~ garnish with pinch of Parsley if desired
