Sweet Potato Tart

This is delicious! I had never had sweet potato pie before this and can say that it is just as yummy as pumpkin pie.

Preparation time:
Cooking time: 2 hrs.

Difficulty: Medium - experience needed
Serves: 6


3 medium sweet potatoes (1 1/2-1 3/4 lbs.) cooked
1/2 c. sugar
1/2 tsp. cinnamon
generous pinch nutmeg
pinch salt
3 large eggs
1 c. light cream or half & half
1 tsp. vanilla extract
1 10" tart crust- sweet pastry dough or pre-made pie crust


Set oven rack to lowest setting and heat to 375degrees. Bake potatoes in oven for appx. 1 hour until soft when pressed with finger. Cool potatoes and peel them. Mash with potato masher.

Stir sugar, spices, and salt into potatoes.
Whisk in eggs, followed by cream, and vanilla.
Pour filling into pie crust ad place in oven on lowest rack and reduce heat to 350degrees.

Bake at 350degrees for 40-45mins. until filling is set and crust browns.

Cool on rack and serve at room temperature with whipped cream or ice cream.
