A basic crepe recipe that can be played with a little to your flavor liking.

1 c. all purpose flour
2/3 c. cold milk
2/3 c. cold water
3 large eggs
1/4 tsp. salt
3 Tbsp. melted butter
**If you like you can add 2 Tbsp. sugar to this to sweeten it up for a dessert like crepe or sweet breakfast crepe. You can also add 1 tsp. of vanilla extract.


Put flour and salt in medium sized bowl. Whisk in milk, water, butter, and egg.
It will be a bit lumpy, put batter into fridge for 1/2 hour and the lumps should mostly dissolve. I also have good luck slowly adding the initial liquid while it turns to a paste before over diluting it. Seems to get less lumpy that way.

I use a frying pan on medium heat and ladle a small amount of batter into the frying pan and tilt the pan in all directions to get the batter all spread out around the pan. Cook about 1 minute then carefully flip, let cook about 30 secs. more and put on a plate.

Fill crepe with whatever fillings you prefer, have fun with it.....fruit compote topped with powdered sugar, bananas and nutella, or ham and eggs, spinach and feta....the options are endless!
