Giada's Butternut Squash Lasagna

A mild flavored lasagna that is quite creamy and delicious! Meatless and tomatoless.

1 med sized butternut squash
salt/olive oil
4 unpeeled garlic cloves
1c. chicken stock

1/4c. butter
1/4c. flour
3 1/2c. 2% or whole milk
1/2 tsp. nutmeg
1 tsp. salt/ 1 tsp. pepper
3/4c. fresh basil leaves

1 package NO BOIL lasagna noodles (love these) won't use all
2 1/2c. shredded mozzarella cheese
1/3c. grated fresh parmesan cheese

9x13 baking dish


Preheat oven 415degrees

Split squash in half and clean out seeds. Sprinkle each side generously w/ salt and olive oil. Place 2 garlic cloves in each cavity, and place cut side down on a baking sheet. Roast squash for appx. 40 mins. until tender when poked with fork.

Scoop out squash and place in a large bowl. Add in chicken stock 1/2 c. at a time while mashing the squash. You can use a food processor or hand mixer if you want a finer puree. Season w/ salt/pepper to taste.

Melt butter in a heavy med. sized saucepan over medium heat. Add flour to melted butter and whisk for 1min. Slowly whisk in milk and bring to a boil over med. to high heat. Then reduce heat to medium and simmer until sauce slightly thickens. Whisk often so mixture does not burn! Add in nutmeg and let mixture cool slightly. Add basil and with an immersion blender puree until smooth. (I don't have one, so I just put half of the liquid in a blender with the basil and poured it all back together and mixed it together). Season to taste w/ salt/pepper.

Preheat oven to 375degrees
Lightly butter a 9x13 baking dish. Spread 3/4c. of sauce on bottom. Arrange 3 lasagna noodles on bottom of pan. Spread 1/3 of squash puree over noodles. Sprinkle w/ 1/2c. mozzarella. Drizzle 1/2c. sauce over noodles repeat layering 3 more times. Sprinkle remaining mozzarella and Parmesan over lasagna.

Spray a piece of foil with nonstick spray and cover baking dish. Cook on center rack at 375degrees. Bake for 40mins. covered, then take off foil and continue baking for appx. 15mins. until cheese and sauce are bubbly and golden. Let sit 15mins. before serving.

***when using no boil noodles it is important to cook it covered. Also don't let the noodles be exposed without any sauce or they may turn out dry.
